Alongside the established events in Trieste, Udine and Grado, there are appointments in small inland towns along the rivers and mountain valleys where you can taste what local fishing, border agriculture and Central European tradition have developed over time. This guide explores both levels, from major events to small village festivals.
The territory of Friuli-Venezia Giulia is divided into geographical zones with distinct gastronomic characteristics. The coastal strip, stretching between Trieste, Muggia, Duino, Grado and Marano Lagunare, is the realm of blue fish, mussels, Manila clams and crabs. The Marano lagoon, rarely visited by mass tourism circuits, preserves a fishing tradition with dip nets and fresh fish processing that is reflected in unpretentious festivals, tied to the rhythm of the tides. March and April The calendar of spring festivals resumes. In Cividale del Friuli the weekly markets become enriched again with wild herbs, wild asparagus and forest floor products. Along the banks of the Natisone, small patron saint festivals are noted with local fish. The osmize of the Trieste and Gorizia Carso reopen and become destinations for those seeking wine sfuso, cooked prosciutto and fresh cheeses.
May Opening of the lagoon season in Marano Lagunare with the first fishing boat outings after the quieter months. The Sagra del Pesce of Marano Lagunare, one of the most established events in lower Friuli, offers fried blue fish, sea bass and moeche during the spring weeks. September Month of transition between summer and autumn, ideal for mushroom and mountain product markets in Gemona del Friuli, Venzone and Tolmezzo. The Sagra della Trota in the municipality of Dogna, in the upper valley of the Fella, is one of the examples of small-scale mountain festival that still tells a subsistence cuisine. In Gorizia and Cormons the first vintage festivals are held in the Collio.
October Vintage in Collio and in the Colli Orientali del Friuli. The markets of Cormons, Cividale and Buttrio become meeting points between producers and enthusiasts. In Venzone the famous Festa della Zucca is held, a regional reference point for autumn products. In Trieste the season of mussels and clams is in full swing.
November and December Return to covered markets and beginning of Christmas markets. In Trieste the Christmas market on Canal Grande offers typical regional and Central European products. In Udine winter markets bring to the piazza aged cheeses, honey and grappas. The Carso osmize close the season but some remain open for the weekends in December.

A village festival on the Natisone, an osmiza open for a weekend on the Carso, a fisherman from Marano dismantling his bilancioni at dawn: these are the moments when the food of Friuli-Venezia Giulia stops being folklore and returns to being what it has always been, a daily act of relationship with the territory.
